Dr. Jennifer Vannoy, D.C

Hi, I’m Dr. Jennifer. My journey into health and wellness didn’t start in a classroom, it started in my own body. As a teenager, I began experiencing debilitating stomach pain after being put on birth control. The pain was unpredictable—gone when I stopped the medication, back with a vengeance when I resumed it. This cycle dragged on for years, sending me to the ER multiple times, only to be dismissed as a drug seeker.


While I was in physician assistant school, things escalated. I developed excruciating pain in my right shoulder, and during an EMT course I learned about organ referral patterns. I realized I might be having a gallbladder attack. I was right. An ultrasound revealed multiple gallstones and severe pancreatitis. Surgery saved my life, but not my health. The stomach pain never went away.


After seeing specialist after specialist, I finally got a colonoscopy that confirmed ulcerative colitis. When I questioned the safety of the medication they wanted me to take (one with side effects that included death) I was met with fear tactics. I was told that if I didn’t take it, I would lose my colon. That moment was a breaking point. As a single widowed mom with three children, I couldn’t accept that as my only future.


What I’ve come to know is this: our bodies are not broken. They are intelligently designed. They don’t make mistakes—everything they do is to protect us. Conventional medicine often chases symptoms and applies Band-Aids, but I wanted to get to the root and give my body what it needed to do what it does best—heal.


I made the hardest and best decision of my life: I left physician assistant school and pursued chiropractic. Through years of research, advanced training, and trial and error, I uncovered how much birth control, poor hydration, inadequate sleep, and years of stress had been contributing to my illness. By addressing these root causes, I was able to turn my health around. The body truly has an incredible capacity to recover when it has the right support.


I began practicing functional medicine as an associate chiropractor, but I quickly saw the same problems I had lived through myself—patients dismissed, gaslit, and left without answers. Beyond that, there was no clear, step-by-step plan. I was restricted in what I was allowed to do and prescribe, which meant only about 10% of patients ever saw real results. The other 90% were often written off, with blame shifted onto them—told they weren’t trying hard enough or weren’t following instructions—when in reality, they had never been given the tools, accountability, or education they needed to succeed.


It broke my heart to watch women invest their time, money, and hope into care that wasn’t designed to truly help them. They were handed a handful of supplements, a vague diet, and a pat on the back, but no real framework. There was no system, no tracking, no way to measure progress or pivot when something wasn’t working. The lack of accountability left patients discouraged and practitioners detached.


That was the moment I knew I couldn’t stay. Patients weren’t failing the system—the system was failing them. I wanted to build a practice where every woman would be seen, heard, and guided through a structured process that actually worked. A practice where we wouldn’t chase symptoms or hide behind excuses, but instead would walk alongside patients with clarity, education, and partnership.

That conviction is what pushed me to create Simplify Health: a practice where women receive both the truth and the tools they need to reclaim their health, and where victory isn’t the exception—it’s the expectation.


At Simplify Health, we also don’t shy away from our faith. We love Jesus, and everything we do flows from that foundation. My favorite thing in the world is to see women win in their wellness—nothing makes me happier than watching them finally feel like themselves again.


Along the way, I’ve been blessed with opportunities and recognition. I graduated valedictorian, became a published research author, and was honored for academic excellence. I’m an avid learner who has completed hundreds of additional hours in pediatric training, years of doula work, and specialized training in pregnancy. I am currently working toward SOT® pediatric certification as part of my ongoing commitment to serve families.


Outside of my practice, I’m a proud mother of six amazing children and married to the most incredible husband in the world. In my free time, you’ll usually find me listening to podcasts or books, studying something new, or simply enjoying time with my family.


My mission is simple: to ensure women never feel dismissed or hopeless the way I once did. I’m here to guide them with truth, clarity, and compassion so they can step fully into the health and freedom they were designed for.

Caroline Parra, PEM

  Hi! I’m Caroline, Dr. Jennifer’s Patient Experience Manager. My journey into functional medicine began with my own health struggles. In my mid-20s, I started facing thyroid issues, gut health challenges, and infertility. I tried to piece things together on my own and eventually found a chiropractor in Texas who practiced functional medicine. Through their guidance, I was able to regulate my thyroid naturally and conceive without medical intervention. That experience completely shifted the way I looked at health.


When I moved back to Florida in 2017, I began working for a chiropractor where I managed patients through their wellness journeys. I loved supporting and encouraging people, but after two years I felt called in a different direction and opened my own natural cleaning business in 2019. I knew there was a real need for people to decrease toxic exposure in their homes, and it gave me joy to help families create healthier environments. Still, I sensed there was more to my story than cleaning houses—I wanted to be part of something that helped people change their health at the root.


That same year, I found Dr. Jennifer as a patient. I was struggling with significant hormonal and gut issues, and together we discovered that mold-related illness was at the root of my problems. For the first time, I felt truly heard and supported, and I began to find answers and relief in a way I never had before. Experiencing that level of care firsthand gave me a new sense of purpose and deepened my desire to help others find the same hope and healing.


In 2022, I became a Certified Health Coach and stepped more fully into my passion for wellness. Joining Simplify Health as part of the team felt like a full-circle moment. I know what it’s like to be on the other side—frustrated, overwhelmed, and searching for hope—and I carry that empathy into everything I do as Patient Experience Manager. My favorite part of this role is walking alongside women from their very first appointment, encouraging them, listening to their stories, and celebrating their victories. Nothing makes me happier than watching a patient go from discouraged to confident and hopeful.


 Outside of my work, I’m still rooted here in Florida, where I grew up. I graduated from the University of Florida with a degree in Public Relations, and today I live in Jacksonville with my husband, our son, and our three dogs. When I’m not at Simplify Health, you’ll usually find me on the beach, fishing, or simply enjoying life with my family. 

Shannon Durell, CHC

Hi! I'm Shannon, a certified Health Coach at Simplify Health. My passion for health and wellness started when I was just 12 years old. I struggled with my weight and spent years trying everything from calorie restriction to fad diets, prescriptions, and even injections—all in an effort to feel better in my own body. Nothing ever gave me lasting results.


After my second pregnancy, I faced postpartum depression, weight struggles, and the pressure of returning to work before I felt ready mentally, physically, or emotionally. I told myself to push through, believing that if I could just “get healthy,” everything else would fall into place. That’s when I started digging into what true health and wellness really meant—beyond what conventional medicine was telling me.


In 2015, I lost my grandmother to Alzheimer’s, and it was a turning point. When I learned that Alzheimer’s could be preventable and even treatable in certain stages, it completely changed the way I thought about food, lifestyle, and disease prevention. My husband and I decided to clean up our diet and give up alcohol, and I committed to eating whole foods and moving my body daily. Within a year, I lost over 40 pounds and felt better than I ever had before.


But life brought new stresses, and despite my best efforts, my health began to unravel again. I suffered from anxiety, fatigue, IBS, brain fog, and eventually, at just 33 years old, I had a stroke. That experience shook me. I knew deep down that stress and lifestyle were major contributors, but once again, my doctors dismissed my symptoms and handed me prescriptions for depression and anxiety. For the third and final time, I said no and walked away, determined to find real answers.


Like so many women, I turned to “Dr. Google” and “Facebook University,” trying to piece together the puzzle of my health on my own. But no matter how much I researched, I couldn’t connect the dots. I had actually been following Dr. Jennifer on social media for over a year before I finally pulled the trigger. At first, I thought her care would be too costly—but when I reached the point where nothing else was working, I realized I couldn’t afford not to try.


Becoming Dr. Jennifer’s patient was life-changing. For the first time, I had thorough labs, real answers, and someone who truly listened. Instead of another prescription, I received a plan to support my body from the inside out. The results were beyond anything I imagined. I now feel better than I ever have in my life.


That transformation inspired me to take the next step. I earned my certification as a Health Coach through the Institute of Integrative Nutrition so I could return to Simplify Health as part of the team. Today, I work alongside Dr. Jennifer, walking with patients through their own journeys. I’m now a firm believer that we cannot put a price on our health, and I love helping other women discover that same freedom.


I feel honored to walk this path with each client, helping them uncover the root causes of their symptoms and empowering them to take back their health because I know what it feels like to be in their shoes.

When I’m not working with clients, you can usually find me on the beach hunting for shells, watching a sunrise or sunset, or spending time with my husband, our two children, and our six dogs here in Jacksonville.
